Shoreditch will welcome the much-anticipated rebirth of Singburi, the beloved East London Thai eatery, reimagined by three friends: Sirichai Kularbwong (Singburi), Nick Molyviatis (Kiln), and Alexander Gkikas (Catalyst).
Under the guise of announcing a ‘sabbatical’ last year, Siri’s parents – pillars of the Leytonstone institution – formally retired, passing the baton to their son, the head chef and creative heart of the restaurant.
Having shared countless meals and discussed projects since their meeting at Singburi, Nick approached his friends with a proposition: to distil its essence and reimagine the restaurant for a new chapter. With an impressive pedigree in restaurant launches – founding chef at Kiln, concept work for JKS, and orchestrating oma’s debut – Nick brought his seasoned expertise to the table. Joining them is Alex, a hospitality dynamo with the café-come-roastery Catalyst and the punchy sauce brand Koffiracha in his repertoire. Together, with Siri’s decades as head chef, the trio knew they were sitting on something special.
Alex, Nick and Siri are poised to propel Singburi into a new era, at a brand-new site just moments from Shoreditch Overground station. The ethos will remain rooted in the spirit of the original while embracing a broader, distinctly London perspective.
